| Description: | The Côtes d’Auxerre, to the south-west of Chablis, is home to some unique and delightful terroirs. The Pinot Noir vines flourish under organic and biodynamic viticulture methods. Constant attention to detail ensures that the beauty of the terroir is reflected with finesse. The harvested Pinot Noir grapes are meticulously sorted before undergoing low-intervention vinification, with as little sulphur as possible. The cuvée is aged in barrels for 18 months before being bottled. The bright red colour reveals a distinctive bouquet dominated by red fruit aromas and subtle hints of spice. On the palate, the fine tannins gently lead to a fresh, tasty and deliciously long finish. This cuvée can be enjoyed while young, or after several years of cellaring. |
